Mom’s Jelly Roll Recipe
Ingredients:
¾ Cup All Purpose Flour
1 tsp. baking powder
½ tsp. salt
4 eggs - separated
Sugar
½ tsp. vanilla
Confectionate sugar
Jelly or Jam any flavor
Directions:
Preheat oven to 375 degrees
Grease cookie sheet & cut wax paper to fit bottom & sides
In small bowl with fork mix flour, baking powder & salt, set aside
In another small bowl mix (with mixer) egg whites until form soft peak.
Beating at high speed gradually add 1/3 cup sugar, beat until sugar is completely dissolved and the whites stand at a stiff peak, set bowl aside
In a large mixing bowl, beat on high speed the egg yolks until think and a lemon color. While beating at high speed gradually sprinkle in ½ cup sugar, add vanilla. Beat until well mixed. Sprinkle in flour mixture from first small bowl. Add white mixture with rubber spatula to yellow mixture by folding in gently.
Once mixed well spread mix onto cookie sheet.
Bake 15 Minutes in oven or until top springs back when lightly touched with finger.
While that is baking in the oven, lay a dish towel flat on counter top, sprinkle powder sugar (sift if there are clumps) on entire towel covering fully.
Once the cake in done in the oven turn pan upside down onto power sugar and remove cake from cookie sheet. Gently remove the wax paper from top of cake. Roll the cake up in the towel to cool.
Once cooled completely unroll cake and spread Jelly over entire cake. Amount of jelly depends on your preference. After jelly is covering cake, roll cake only (not towel too) to form the Jelly roll. Add additional powder sugar to outside if needed. Remove roll from towel and place on serving dish. Slice when ready to eat.
